  • 1.3 pounds boneless chicken, cut into 2-inch squares
  • 2 large tomatoes, cut into pieces
  • 2 tablespoons tomato paste
  • 1 large red onion, cut into small pieces
  • 6 cloves garlic, grated
  • 1 medium green bell pepper, cut into 2-inch pieces
  • 1 large potato, cut into 2-inch squares
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 tablespoon paprika
  • 1 tablespoon salted butter (optional)
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Preheat your oven to 200°C (400°F).
  • In a metal baking pan, combine the cut tomatoes, potatoes, bell pepper, and onion.
  • In a separate bowl, mix the boneless chicken with cumin, thyme, 1 teaspoon of paprika, 1 teaspoon of grated garlic, and 1 tablespoon of extra virgin olive oil. Set aside.
  • Add the tomato paste, remaining garlic, and the seasoned chicken to the baking pan with the vegetables. Gently mix everything together.
  • Drizzle the remaining extra virgin olive oil over the mixture and stir to combine. Place the chicken on top to prevent the vegetables from overcooking.
  • Season with salt and black pepper. If you prefer a richer color, feel free to add more tomato paste or paprika.
  • If using, place a tablespoon of butter in the center of the mixture.
  • Cover the baking pan with foil to keep the chicken moist.
  • Bake in the preheated oven for 30 minutes.
  • After 30 minutes, remove the foil and return the pan to the oven. Broil for an additional 5-10 minutes until the chicken is browned and the vegetables are tender.

Notes

Serve this delicious dish with Turkish side dishes like salad, fries, or pita bread for a complete meal. Feel free to add other vegetables like zucchini or carrots for extra flavor and nutrition.
