Ingredients
  

  • 1 tablespoon canola oil
  • 1 tablespoon finely chopped lemongrass
  • 1/2 tablespoon lemon juice
  • 1 teaspoon soy sauce
  • 1 teaspoon light brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon fish sauce
  • 1 1/2 pounds chicken thighs pounded to an even thickness

Instructions
 

  • In a glass bowl, mix canola oil, lemongrass, lemon juice, soy sauce, brown sugar, garlic, and fish sauce until the sugar is dissolved.
  • Add the chicken to the marinade, turning to coat. Marinate in the refrigerator for 20 minutes to 1 hour.
  • Preheat the grill to medium heat and lightly oil the grate. Remove the chicken thighs from the marinade, shaking off excess. Discard any leftover marinade.
  • Grill the chicken until it is no longer pink in the center and the juices run clear, about 3 to 5 minutes per side. Ensure the internal temperature reaches at least 165°F (74°C) with an instant-read thermometer.
