  • 1 teaspoon canola oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 ounce taco seasoning
  • 10 ounces diced tomatoes with green chiles undrained
  • 15.5 ounces pinto beans rinsed and drained
  • 15.25 ounces whole kernel corn drained
  • 9.25 ounces corn chips
  • 2 cups shredded Mexican cheese blend

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the canola oil over medium heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onions are tender, about 6-7 minutes. Tip: Stir frequently to ensure even cooking.
  • Stir in the taco seasoning mix and the diced tomatoes with green chiles. Bring the mixture to a simmer and cook until thickened, about 2-3 minutes, stirring constantly. Add the rinsed pinto beans and drained corn to the skillet.
  • Layer the corn chips in a greased 13 x 9-inch baking dish. Spoon the taco meat mixture evenly on top. Sprinkle with the shredded cheese.
  • Bake in the preheated oven until the cheese is bubbly and golden, for about 15-20 minutes.
  • Serve hot with your choice of toppings like sliced green onion, black olives, pico de gallo, sour cream, avocado, guacamole, and jalapenos. Tip: Encourage everyone to customize their servings for a fun dining experience!
