  • 2 cup shredded zucchini patted dry
  • 1.25 cup plain panko bread crumbs
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 0.5 cup finely chopped green onion
  • 2 tablespoon chopped dill
  • 1 teaspoon Kosher salt or to taste
  • 1 teaspoon garlic powder

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. This ensures easy cleanup and prevents sticking.
  • In a large bowl, mix together the shredded zucchini, panko bread crumbs, cheddar cheese, egg, green onion, dill, salt, and garlic powder until well combined. Make sure the zucchini is well-drained to avoid soggy bites.
  • Take one tablespoon of the zucchini mixture at a time and shape it into small balls. Place them on the prepared baking sheet. You can use a cookie scoop for uniform sizes.
  • Bake in the preheated oven for about 30 minutes, flipping the bites halfway through. They should be browned and crisp when done.
  • Serve the zucchini cheddar bites warm with ranch dressing for dipping, if desired. Enjoy each bite!

Notes

For extra flavor, consider adding a sprinkle of Parmesan cheese or a dash of cayenne pepper to the zucchini mixture before baking.
