  • 1.5 pounds sirloin tips, cut into 1-inch cubes
  • 3 tablespoons flour
  • 3 tablespoons olive oil
  • 1 teaspoon brown sugar
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cube beef bouillon
  • 1.5 teaspoons Worcestershire sauce
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 3 tablespoons cornstarch
  • 0.25 cup cold water

Instructions
 

  • Combine the beef seasoning mix by mixing brown sugar, black pepper, salt, garlic powder, onion powder, chili powder, and paprika. Set aside.
  • Cut the sirloin tips into 1-inch cubes, removing any large pieces of fat. Sprinkle the beef seasoning mix over the meat and toss to coat. Then sprinkle flour over the meat and toss again to ensure an even coating.
  • Heat olive oil in a large skillet over medium-high heat. Brown the meat in batches for 30-45 seconds on each side. Avoid overcrowding the pan to ensure even cooking. Transfer the browned meat to a plate. Note: Do not fully cook the beef at this stage, as it will continue cooking later.
  • Reduce heat to medium, add butter and onions to the pan, and cook until the onions are softened, about 5 minutes. Add garlic and cook for an additional minute, stirring well.
  • Add all remaining gravy ingredients except the cornstarch mixture. Bring to a boil, allowing the flavors to meld together.
  • Combine cornstarch and cold water in a small bowl, then whisk into the sauce gradually, stirring continuously until the desired thickness is achieved.
  • Reduce heat to medium-low, add the beef and its juices back to the skillet. Cook with the lid partially covered for 10-15 minutes until the beef is cooked through and tender. Remove from heat.
  • For an optional velvety finish, swirl in 1 tablespoon of cold butter at the end for added richness.
  • Serve the beef tips with gravy over mashed potatoes, egg noodles, or rice for a complete meal.

Notes

For a richer flavor, you can add mushrooms or bell peppers to the gravy. Ensure not to overcook the beef during the browning stage to keep it tender.
