Instructions
Preheat your oven to 350°F (177°C).
In a large mixing bowl, combine the almond flour and cottage cheese. Stir well with a spatula until the cottage cheese is fully mixed into the almond flour, forming a soft dough.
Place the dough on a large sheet of parchment paper. Cover it with another sheet of parchment paper and roll it out into a rough 9 x 12 inch rectangle, about 1/4 inch thick.
Remove the top parchment paper layer and transfer the dough with the bottom parchment paper onto a large baking sheet.
Bake the dough for 25-30 minutes until it is lightly golden on top. It should not be fully cooked as it will bake more with the cheese.
Take the breadsticks dough out of the oven and evenly sprinkle shredded cheese on top, leaving a 1/2 inch border around the edges. For extra cheesiness, add another 1/2 to 1 cup of cheese (around 1 1/2 cups total). You can also mix in other cheeses for more flavor.
Place the breadsticks back in the oven and bake for an additional 10 minutes or until the cheese is completely melted and the edges are golden brown. Optionally, garnish with finely chopped parsley.
Let the breadsticks cool slightly before cutting. Serve with your favorite dipping sauce. Store any leftovers in the fridge.
