Instructions
Rinse the pinto beans in a colander under water to remove any dirt or debris.
Place the beans in a large bowl and cover them with hot water, allowing room for the beans to expand. Soak the beans overnight to reduce gas.
The next morning, drain and rinse the beans thoroughly. Transfer them to the crock pot.
Add the chicken broth, salt, pepper, minced garlic, diced green chilies, and cumin if desired. Mix well to combine all ingredients.
Pour enough water into the crock pot to cover the beans by 1-2 inches. This ensures even cooking.
Cook on LOW for 8-9 hours or on HIGH for 4-5 hours. Stir occasionally if possible, to enhance the flavors.
Notes
Soaking the beans overnight will help reduce gas and ensure even cooking. Feel free to adjust seasonings to your taste.
