  • 16 ounces dried pinto beans
  • 32 ounces chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 teaspoons minced garlic
  • 0.25 cup green chilies, diced
  • 0.5 teaspoon cumin powder (optional)

Instructions
 

  • Rinse the pinto beans in a colander under water to remove any dirt or debris.
  • Place the beans in a large bowl and cover them with hot water, allowing room for the beans to expand. Soak the beans overnight to reduce gas.
  • The next morning, drain and rinse the beans thoroughly. Transfer them to the crock pot.
  • Add the chicken broth, salt, pepper, minced garlic, diced green chilies, and cumin if desired. Mix well to combine all ingredients.
  • Pour enough water into the crock pot to cover the beans by 1-2 inches. This ensures even cooking.
  • Cook on LOW for 8-9 hours or on HIGH for 4-5 hours. Stir occasionally if possible, to enhance the flavors.

Notes

Soaking the beans overnight will help reduce gas and ensure even cooking. Feel free to adjust seasonings to your taste.
