Ingredients
  

Main Ingredients

  • 1 tbsp extra virgin olive oil
  • 13.5 oz beef sausage sliced about 1/2 inch thick
  • 1/3 cup diced red onion
  • 1 red bell pepper chopped
  • 1 orange bell pepper chopped
  • 2 small to medium zucchini sliced and quartered
  • 1/2 tsp garlic salt
  • 1/4 tsp sea salt
  • 1/8 tsp fresh cracked black pepper
  • 2 ears of corn
  • Additional sea salt and fresh cracked pepper to taste
  • For topping: 1/8 cup of basil and cilantro each
  • Optional: Poblano or Jalapeno pepper for added heat

Basil Cilantro Crema:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/3 cup basil packed
  • 1/4 cup cilantro packed
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp garlic salt
  • 1/4 tsp white pepper
  • Juice from half a lime about 1/2 - 1 tbsp

Instructions
 

  • In a food processor, blend together the mayonnaise, sour cream, basil, cilantro, olive oil, garlic salt, white pepper, and lime juice until smooth. Set aside and refrigerate if not using immediately.
  • In a large skillet, heat the extra virgin olive oil over medium to high heat. Once shimmering, add the beef sausage slices. Cook for about 3 minutes on each side until browned, then remove from the pan and set aside.
  • Preheat your grill or another skillet. Once hot, add the corn cobs and cook for about 4 minutes on each side over medium heat. If using an outdoor grill, place the corn directly over the flame and close the lid.

Notes

This dish is perfect for summer gatherings. Feel free to add extra veggies or serve with bread.
